Eastern North Carolina Whole Hog

Whole hog is not simply another protein on the menu. The style comes from Eastern North Carolina, where the entire pig is cooked together and the finished meat is chopped and seasoned so different textures and cuts become one balanced barbecue. That regional approach is the foundation of Pitt County BBQ.

For Events Where the Cook Matters

Whole hog works best when you want the barbecue itself to be part of the event: company milestones, employee appreciation events, community gatherings, collaborations and other larger occasions where live-fire cooking adds something meaningful beyond simply delivering lunch.

The Cook Is Planned With the Event

A whole-hog cook requires more planning than a standard drop-off. We review the site, cooker access, fire and smoke considerations, timing, service setup and the rest of the menu before the event is confirmed. The goal is to make the live-fire portion feel intentional without creating unnecessary disruption for the host.

From the Pit to the Table

Once the hog is finished, the meat is brought together and seasoned in the Eastern North Carolina tradition rather than treated as a collection of separate cuts. From there, the service can stay focused on the hog or be built out with additional Pitt County proteins and sides depending on the size and style of the event.

Site, Access and Fire Requirements

Live-fire cooking needs a suitable location. Access for the cooker, safe operating space, surface conditions, smoke considerations and any site-specific permissions all matter. If the location is not appropriate for live fire, we can discuss a different Pitt County service model rather than forcing the cook into the wrong site.

More Than a Pig Roast

Pitt County BBQ’s whole-hog work is built around a specific regional barbecue tradition, not simply the spectacle of roasting a pig. Fire management, seasoning, chopping and service all matter. That focus is what makes whole hog one of the clearest expressions of what Pitt County BBQ is about.
